CHOUX PASTRY

INGREDIENTS

Pâte à Choux

  • 150 g Water
  • 75 g Butter
  • 3 g Salt
  • 3 g Sugar Breakfast
  • 105 g Wheat Flour
  • 140 g Eggs

Croustillant

  • 70 g Butter
  • 70 g Sugar Breakfast
  • 90 g Wheat Flour

COOKING INSTRUCTIONS

  • Step 1
    Take water and butter in a saucepan. Cook till butter melts.
  • Step 2
    Add wheat flour, salt and sugar off the gas.
  • Step 3
    Mix well and bring back on flame. Keep mixing till a thin white coat forms on the bottom of the pan.
  • Step 4
    Transfer to the kitchen-aid and beat using paddle attachment till it cool down.
  • Step 5
    Add chilled eggs slowly. Beat till shiny consistency. Rest for 10 minutes.
  • Step 6
    Pipe on a Silipan /Flexipan with French nozzle. Do oil wash.
  • Step 7
    Bake at 160°C-180°C in convection oven. Do not open the oven in between.For the crust
  • Step 8
    Mix all the ingredients and make a dough. Mix color as required.
  • Step 9
    Sheet thin at 2 mm and cut to desired shape.
  • Step 10
    Place on top of the choux pastry and bake with the pastry.
